EDGARD – West St. John High School held its 2010-11 African Food Exposition recently. Dr. Bertha Davis-Williams’ Family and Consumer Sciences classes, Nutrition Education and Family and Consumer Science I, presented the event. By participating in this project, students changed their attitude about African culture and cuisine. The students presented individual and group posters as well as a dish representative of the country they researched.

The presentations highlighted 12 African countries, which included: Bosnia – Damond Pierce, Nigeria – Samantha Trench, Madagascar – Laron Washington, Malaysia – Kimberly Bailey and Kylum Favorite, South Africa – Shane Gautier and Eumeka Jackson, Libya – Rashada Julien and Angela Antoino, Algeria – Darion Bright, Botswana – Da’Jae Lumar, Morocco – Renee Julian, Sierra Leone – Kemarr Roybiskie, Malie – Ronnie Fiest, and Guyana – Devon Williams.

The judges were chemistry andpPhysics teacher Brian Carter and Executive Chef Pamela Tramble-Johnson. Tramble-Johnson is currently employed by the Job Corps Program in Homestead, Fla., managed by Education and Training Resources. Her job title is that of Food Service Manager, Technical Advisor for the Food Services and Culinary Arts Program in a variety of regions of the Department of Labor Job Corps Program.

Following the presentations, Tramble-Johnson provided the students with information on the benefits and criteria of a career in the culinary arts and her path to becoming an executive chef. She also discussed the networking that resulted in her coming to WSJH.
